The centrepiece of this treat is my Salted Chocolate Cashew Butter, made in minutes in the Thermomix. Here’s what’s inside:
• 370 g roasted salted cashews – creamy, protein-rich and full of healthy fats
• 70 g coconut oil – nourishing, metabolism-supportive and beautifully smooth
• 45–55 g pure maple syrup – a mineral-rich natural sweetener
• 2–3 tsp cocoa powder (70% cocoa) – rich in magnesium, iron, and mood-boosting theobromine
This butter is so luscious and satisfying — the perfect balance of sweet, salty, and chocolatey.

How to Make These Divine Stuffed Dates
1. Make the Salted Cashew Cacao Butter:
Add 370 g roasted salted cashews and 70 g coconut oil to the Thermomix. Blend until creamy. Then add 45–55 g maple syrup and 2–3 tsp cocoa powder (70% cocoa), and blend again until smooth.
2. Prepare the Dates:
Gently pit soft high quality dates and open them like little pockets.
3. Fill & Dip:
Spoon the cashew cacao butter into each date. Dip the filled dates halfway into melted dark chocolate (70% or higher).
4. Sprinkle (optional):
Top with flaky sea salt, chopped nuts, hemp seeds, freeze dried raspberries or rose petals before the chocolate sets.
5. Chill & Enjoy:
Place in the fridge for 10–15 minutes to set. Enjoy slowly — ideally with a cup of warm cacao or herbal tea.
