Made these for our Saturday morning breakfast on the beach. They are made with sourdough discard, are quick and easy to make and tasty too. They would be a lovely addition to the kids lunchboxes.
You will need :
1 cup plain flour
1 cup ground almonds
1 teaspoon baking soda
1 teaspoon ground cinnamon
Large pinch of salt
3/4 cup sourdough
1/2 cup maple syrup
1/3 cup milk( I used oat milk)
1/4 cup sunflower oil/ melted butter
1 large egg
2 pears cubed or grated
flaked almonds (optional)
Method
• preheat oven to 180oC and line a muffin tin with 12 cases.
• in a large bowl mix all the dry ingredients
• in a large jug mix all the wet ingredients and add to the dry ingredients.
• fold in chopped pear and scoop mixture into the muffin cases. Top with flaked almonds.
• bake for 25 - 30 minutes until muffins are golden brown and skewer comes out clean. Leave to cool and enjoy.
